Our technical department selects only the highest quality unpasteurised ewe's milk for use in making this exceptional, mature cheese. Aged for 12 months, it is bathed in virgin olive oil every 15 days, enabling it to acquire a bold, outstanding taste. A delight for all fine cheese lovers.
